Cookies are a yummy treat. Fudgy brownies are a yummy treat. Put them together into one treat and you just might explode. Just kidding. Do I have your attention now?

What is a Brookie?

A brookie is a dessert that actually has many different varieties. Typically it involves brownie type dough combined with another flavor of cookie dough. Most often they are baked into cookies, but sometimes they are made into bars.

Seriously, these cookies tasteA-mazing! Plus they look all fancy like they came from a bakery. So you can totally impress your friends.

Chocolate chip cookies have always been a favorite of mine. But sometimes I want something a little more chocolatey. You know, like brownies. When I saw a recipe for Brookies over at Mel’s Kitchen Cafe, I knew I had to give them a try.

I figured combining two of my very favorite treats had to be a win. Which of course it was. An epic win actually. These cookies are soft, chewy, and filled with chocolate goodness. I ate way more than my share of them. Beware, they are scary good!

HOW TO MAKE BROOKIES

Ingredients needed:

  • butter
  • sugar
  • brown sugar (I used light, but you can use dark brown sugar if you prefer.)
  • eggs
  • vanilla extract
  • all purpose flour
  • unsweetened cocoa powder (I use Hershey’s)
  • baking soda
  • baking powder
  • salt
  • mini chocolate chips

You need to make the brownie part of the cookies first, because the dough needs time to chill. Cream butter and sugars in a large mixing bowl. Add the egg, yolk, and vanilla and beat till creamy. Stir in the dry ingredients. Cover and chill while preparing chocolate chip dough.

While the brownie dough is chilling, prepare the chocolate chip cookie dough. Cream butter and sugars in a large mixing bowl. Add the egg, yolk, and vanilla. Beat till creamy. Add the dry ingredients andchocolate chips. Stir till ingredients are well mixed.

TO FORM BROOKIES: Take a small portion of brownie dough and roll it into a ball. Take a small portion of chocolate chip dough and roll it into a ball. Lightly smash the balls together, and form a new larger ball of dough.

Place on baking sheets and bake at 350° for about 10 minutes.

HOW TO STORE BROOKIE COOKIES:

-Stored in an airtight container, these cookies will last for 3-5 days at room temperature. To store them longer, you can freeze them. I like to place them in heavy duty ziplock freezer bags. They will last for 5-6 months in the freezer.

Can I freeze the dough? I think this particular cookie recipe works best with fresh dough because the brownie part needs to be cold while the chocolate chip dough is room temperature.

However, you can still freeze it. You can freeze the two types of doughs separately, or roll them into balls and freeze them that way. The dough will last about 3 months in the freezer in an airtight container.

To bake frozen cookie dough balls, you can either bake them frozen and add 3-4 minutes to the baking time, or thaw the cookie dough balls first.

PRO TIPS:

  • Don’t forget to make the brownie dough first. It needs to be chilled so it firms up and doesn’t spread too much while baking.
  • I added baking powder to the original recipe, because I like tall chunky cookies. Since I live at a high altitude, I tend to get flat cookies without it. But I think even if you live at sea level, you should be fine following the recipe just as written.
  • If you get to the end of the dough and have extra of one left over, no worries. Just make an ordinary cookie. It will still be awesome. Or if you prefer, you have my permission to eat the dough. 🙂

Handy Tools for Making Brookies Cookies

  • I have a stand mixer and a Bosch, but for making cookies I like to use a hand mixer. It’s great for creaming the butter and sugar.
  • I love my silicone pan liners and use them every time I make cookies. Nothing sticks to them!
  • You can use regular chocolate chips, but I like using mini chocolate chips for this recipe. You get more chips in every bite, and the dough is also a little easier to roll together.

Ingredients

Brownie Dough

  • 10 Tbsp soft butter (1/2 cup + 2 Tbsp)
  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 23 Tbsp flour (1 1/4 cup + 3 Tbsp)
  • 1/2 cup cocoa
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Chocolate Chip Cookie Dough

  • 10 Tbsp soft butter (1/2 cup + 2 Tbsp)
  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 2 cups + 2 Tbsp flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup mini chocolate chips

  1. FOR BROWNIE DOUGH: Cream butter and sugars in a large mixing bowl. Add the egg, yolk, and vanilla and beat till creamy, about 2 minutes.
  2. Combine flour, cocoa, soda, baking powder, and salt in a small bowl. Sift into the sugar mixture. Stir till dough is just combined. Cover and chill while preparing chocolate chip dough.
  3. FOR CHOCOLATE CHIP COOKIE DOUGH: Cream butter and sugars in a large mixing bowl. Add the egg, yolk, and vanilla. Beat till creamy.
  4. Whisk flour, soda, baking powder, and salt in a small bowl. Add to the sugar mixture with the chocolate chips. Stir till ingredients are well mixed.
  5. TO MAKE BROOKIES: Preheat oven to 350 degrees.
  6. Take a small portion of brownie dough and roll it into a ball. Take a small portion of chocolate chip dough and roll it into a ball. Lightly smash the balls together, and form a new larger ball of dough.
  7. Place dough on silpat lined or lightly greased cookie sheets. Flatten slightly with your hand.
  8. Bake at 350° for about 10 minutes. Cool on pans for 2-3 minutes, then remove to cooling racks to cool completely.

Notes

Sorry some of the ingredients are in non standard measurements. It's the only way I could get the nutrition calculator to work. 😉
