What? You said Homemade Strawberry Jam in the Instant Pot? Well count me in. Wherever that is happening I want some!

Like many 30 somethings that grew up in the North of England in the 80s and 90s strawberry jam was a staple of the diet.

You always had at least one jar of it in the door of the fridge and then whenever you had some spare bread, then out would come some bread, butter and strawberry jam.

Recipe This | Instant Pot Strawberry Jam (2)It was always amazing and always felt like something luxury when it reality it was not. It was cheap to make, delicious and nearly always served for breakfast on a Saturday morning.

My most fond memories were always of my paternal grandparents serving it up. They loved their jam or marmalade on toast.

On a Saturday they would start the day with a single boiled egg, followed by loads of buttery toast with lots of strawberry jam or orange marmalade.

I never cared much for the marmalade as I always thought that it tasted disgusting (and still do) but the strawberry jam with the melted butter was out of this world amazing.

It would have come from either the supermarket or a Yorkshire jam and pickle shop.

But on the other hand if you have fresh strawberries and an Instant Pot then making your own Instant Pot Strawberry Jam is an absolute must.

When we made our first batch in the Instant Pot we were so, so tired. It was a heat wave and the temperatures was well into the 40’s and we felt like we had been suffocating from global warming.

We had also been up all night comforting our under 3s. As if there is something a toddler and a baby don’t like then it is super hot houses.

But we had a lot of strawberries that needed using up. It was a case of them being super hot and we needed to use them up before they turned and went mouldy. So here we are on little sleep in the heat making strawberry jam.

Thankfully the great thing about theInstant Potis that it is quick and effortless. You probably put more effort into sterilising the jam jars or eating the jam than you do in making the jam.

To make strawberry jam in the Instant Pot is just a few easy ingredients:

Plus, if you want it thick like you buy from the grocery store, then add in some gelatine.

That is still JUST 5 SIMPLE ingredients that are very easy to source.

Here in Portugal everything is always about frugality. So its no surprise that in the hospitals all they seem to give you to snack on is bread and jam.

There was so much of it when I was in hospital having my kids that by the time I came out, I didn’t touch jam for a long time.

Well until now that is!

When we made this Instant Pot Strawberry Jam version it made loads of jars and gave us the chance to give some to our next door neighbour.

She is a lovely elderly lady and is always giving us fresh fruit and vegetables from her allotment so it gave us the chance to give some back.

Plus even though I love strawberry jam I struggle to eat it all in a reasonable time, so a big batch like this would last me months.

  • Cool overnight.

Notes

We cooked our Instant Pot Strawberry Jam in the late afternoon, then placed it in the fridge and it was ready to use by late morning of the next day. We recommend 3 medium sized mason jars for your jam making.

ALWAYS sterilise your jam jars before you use them. Because strawberries and raspberries are very similar fruits, you can mix and match them in this Instant Pot Strawberry Jam. Don’t put the fresh strawberries in whole. It will stop the liquid breakdown for the Instant Pot to come to pressure.

Please make sure that you give it 10 minutes NPR, if you don’t you will have a dangerous strawberry explosion. For jelly powder I used a quick half a sachet of strawberry jelly powder. You can use any that you like

FAQs

Why add lemon juice when making strawberry jam? ›

Adding acid in the form of fresh lemon or lime juice is important for two reasons: First, it makes for a more well-balanced jam, returning some of the acidity lost with the addition of sugar. Second, pectin needs acid to properly activate, or firm up.

Should you soak strawberries before making jam? ›

Put the strawberries in a bowl and gently toss through the sugar. Leave uncovered at room temprature for 12 hrs or overnight. This process helps the sugar to dissolve, ensures the fruit doesn't disintegrate too much and helps to keep its vibrant colour.

What thickens strawberry jam? ›

Cornstarch - If your jam isn't as thick as you'd like it after 15-20 minutes of boiling, keep in mind that it will thicken more as it cools. You can also add a "slurry" to help thicken it. A slurry is a mixture of equal parts cornstarch and cold water.

Does lemon juice thicken jam? ›

Lack of acidity: Acids like lemon juice help lower the jam mixture's pH, which reacts with the natural or added pectin to help thicken the jam. If a jam recipe doesn't call for lemon juice or lime juice, it could rely on another ingredient, like added pectin, to set the jam.

What happens if you don't put lemon juice in jam? ›

Unfortunately, now that the pectin is dissolved and free, the strands of pectin repel each other because they carry an electric charge that is negative. Without a little help, the pectin strands can't come together to form a network that will set your batch of jam — that's where the lemon juice comes into play.

Is citric acid or lemon juice better for jam? ›

The rule of thumb:1 Tablespoon of lemon juice can be swapped for 1/4 tsp of citric acid powder for canning. But citric acid is not used for adding flavor. It is used more like a preservative. For jams or jellies I would strongly suggest you use lemon juice.

Is strawberry jam better with or without pectin? ›

No extra pectin– You may wonder if strawberry jam is better with or without pectin. Strawberries are naturally low in pectin, so some people prefer to add additional pectin to jams and jellies. However, I actually prefer homemade jam without extra pectin. They are a bit softer in texture, making it more versatile.

What to use instead of pectin for jam? ›

What Are Substitutes for Pectin?
  • Citrus peels. Citrus peels—especially the white part, or pith—are naturally packed with pectin. ...
  • Cornstarch. Cornstarch is a natural thickener that works as a seamless substitute for pectin.
  • Gelatin. Gelatin is a viable option for non-vegans or non-vegetarians.
  • Extra sugar.

Will adding more sugar thicken jam? ›

Since pectin is activated by sugar, it requires using a considerable amount of sugar to activate the pectin and set (i.e. thicken) your jam. If you try to cut back on the sugar, it won't set properly.

Should you stir jam while it's boiling? ›

Stir to ensure all dissolved. Do no stir jam once boiling, but use a wooden spoon to check it is not sticking on the base of the pan. Stirring lowers the temperature and delays setting point being reached. It is wasteful to remove scum too often.

Can you use bottled lemon juice to set jam? ›

By using bottled juice, you ensure that your preserves have a consistent level of acidity, which makes them safe for canning. And when making jams or jellies, the degree of acidity in any citrus juice added affects the natural fruit pectin's ability to gel.

How to fix runny strawberry jam? ›

If, after waiting, you find the jam is still too loose for your liking, empty the jars back into a wide pot and cook again. Wash and sterilize the jars and try again. While you can simply reduce the jam to your liking, you can also add commercial pectin or chia seeds to the reducing jam to guarantee thickening.

Why add lemon juice to strawberries? ›

This Citrus Macerated Strawberries recipe is the simplest way to enjoy the season's best strawberries. The lemon juice intensifies their flavor. Instead of sugar, you can also use maple syrup to sweeten them.

What is a substitute for lemon juice in strawberry jam? ›

Replace the lemon juice with an equal quantity of another acid, such as balsamic vinegar, lime juice, red wine vinegar, white wine vinegar, apple cider vinegar, or sherry vinegar.

What is the role of citric acid in jam making? ›

Citric acid serves as an acid that not only strengthens the taste but also brighten jam colour and clears the formed gel [20]. In addition, the colour produced by jam also depends on the level of maturity of the fruit used.

Does lemon juice stop jelly setting? ›

Acidic ingredients, such as pineapple, kiwi, or fresh lemon juice, can interfere with the setting process of gelatin. The enzymes present in these fruits can prevent gelatin from firming up properly, leaving you with a jelly-like consistency instead of a solid dessert.
