Frequently asked questions

Can you freeze vegetable fritters?

We recommend cooking the veggie fritters or zucchini fritters first before freezing. Allow them to cool down first, then place in an airtight container and freeze for up to one month. Simply defrost them and reheat either in the oven or microwave.

How do your shred zucchini?

It is best to use a grater to shred zucchini for fritters or bread. Allow the zucchini water to drain out of the zucchini for about 15 minutes either using a cloth or paper towel. This will prevent the fritters from getting too soggy.

How do you get water out of shredded zucchini?

You may simply let the shredded zucchini to sit for 15-20 minutes in a colander or paper towel. The zucchini will “sweat” and most of the water drains out of it. You could sprinkle some salt on zucchini as well to speed up this process.

The egg serves as a binding agent. You can use flaxseed mixed in with some water. Or a bit of greek yogurt watered to be runnier for dipping and binding the flour and crumbs

FAQs

How do you make fritters less soggy? ›

The eggs you use need to be small and cold. Larger eggs have more water from the egg white, resulting in wetter batter and sad, soggy fritters. The reason you want a cold egg is because cold liquid helps to slow the development of gluten when liquid and flour are added together, which makes for a better texture!

Why are my fritters not crispy? ›

The most common causes for soggy fritters are too much batter (basic flour and egg batter like used in pancakes will never cook up crispy), and whatever you're frittering leeches too much water when cooking.

How do you keep fritters from falling apart? ›

Get the skillet searing hot.

As you're combining all the ingredients for your fritters, go ahead and get the skillet warming up over medium-high heat with a bit of oil. A hot skillet will start cooking the fritters as soon as they hit the pan. That helps sear a crust on each fritter that will hold them together.

How wet should fritter batter be? ›

Batter consistency is key to good fritters. If too runny, add a touch of extra flour (otherwise fritters soggy inside). If way too thick, add a touch of water. It does come down to how juicy / how well the water was removed from the zucchinis.

Does baking soda make fritters crispy? ›

Is baking soda or powder best for frying? A pinch of baking soda can help produce crispy fried foods. It reacts with the acid in the batter to create carbon dioxide bubbles. These lead to an airy batter and a crisper, fluffier result.

Why is my fried zucchini mushy? ›

Zucchini is made of over 90% water. When cooked, it gets soft and slowly releases that water into whatever dish you're cooking. If zucchini is overcooked, it will have a mushy, soft texture. In certain recipes, the author may recommend that zucchini be patted dry or salted and drained before cooking.

Why are my zucchini fritters oily? ›

I love zucchini fritters but there's quite an art to making a decent one. If the mix is too wet, they can be soggy or doughy. Too much oil and they can be greasy. Not enough oil and they won't be crispy (and who doesn't love crispy?).

Why are my zucchini fritters sticking to the pan? ›

If your zucchini fritters are falling apart, it's likely because the fritters are sticking to the skillet or the batter was too wet. Getting the zucchini dry before preparing the batter so the binding agents can hold the fritter together. If you have a non-stick frying pan, opt for that as well.

What is the purpose of the egg in fritters? ›

Alternatively, don't use them at all. The eggs are there with the flour to bind the fritters together, and to make the fritters rise a little, but they're not absolutely necessary where cheese will melt and act as binding.

How do you know when fritters are cooked? ›

Just watch them and make sure they don't get too brown, but cook them long enough to make sure the batter is cooked through, about 2 to 2 1/2 minutes total. Repeat with the remaining batter. Remove the fritters and drain on a paper towel.

What is the best oil to cook fritters in? ›

Vegetable oil — vegetable oil is ideal for frying because it has a high smoke point and won't burn while you're frying the fritters. Peanut oil is another great option.

Is pancake batter the same as fritter batter? ›

A fritter batter is a muffin batter without butter (fat). How does pancake batter fit in? Right in the middle of the two because it use 1/2 part fat, but keeps the other core components the same. These all fall under the quick bread family, which use baking powder or soda as a leavener.

Can you keep fritter batter overnight? ›

You can make the batter up to 1 day ahead of time and store in the fridge. I've used this trick when I'm a bit short on time and know that I'll be needing to rush dinner the following night.

How do you keep patties crispy? ›

Just place them on a cooling rack set over a baking sheet.

In much the same way, putting fried food on a cooling rack means the excess oil will drip off, but there's enough air circulating underneath the food that the bottoms don't get soggy.

Why are my fritters doughy? ›

If the fritters feel raw and doughy on the inside there could be two possible reasons. One is that the oil is just too hot, causing the outside to brown too quickly. You may find that you need to reduce the heat under the pan during cooking.

Why did my apple fritters get soggy? ›

Frequently Asked Questions. Why are my apple fritters soggy? This is most likely the result of oil temperature. If your oil is too cool, your fritters will take a long time to fry and will end up greasy.
